Look what I've got ;D
I was so excited when I found these books.

How amazing is that !!
I was looking for some nice presents and I think ...hmmm being honest, I couldn't resist and bought 3 cocktail books, one for myself :D too. I can't wait to try to make these cakes ! So pretty! So sweet ! Can't stop looking at them. That is another present to myself...Not bad, I just feel very creative at the moment ;D so here is something new to try...The Sainsbury's Cocktail book impressed me. I was looking through and I felt like it is really easy to make these Cocktails not complicated at all...so I am tempted to enjoy some of these this Summer :) What a great idea ;)
Wow , that is instant Summer in your living room or in your garden, when you make one of these....Also, instant craving for holiday...Tequila Sunrise sounds good to me :D

Fried cauliflower
Try this today !
We are expecting a hot weather and this recipe is so nice on Sunny Day.
Typical English subject to start the conversation with, is the weather;)
Anyway Fried coli flour with a lovely salad on the side ;) it is even better with some mush potatoes...Well it is up to you, you can have both ;D
That is how I do mine :
You will need some bred crumb. You can buy some, but in my opinion the best one is fresh made at home. So if you get baguette or some bread that went stale, don't worry, just leave it out and it will dry in few days....This is the best material for bred crumb ;D You only need to grate it or put it in processor.
Cut up coli flour up, chunkier the better. Cook it for about 10 min. just to get it softer, but still it needs to keep it's shape. Let it cool down and sprinkle it with salt to your taste.
Now, you will need 3 plates. One for flour, one for the egg, one for the bred crumb.
Cover cauliflower first in flour , than in egg and bred crumb.
Pile it on the plate.
When you finished your prep, now you can fry the peaces in sunflower oil, or try coconut if you prefer.

My side salad is easy.
Iceberg salad chopped up , sprinkle it with bit of salt, stevia , balsamic vinegar and my special pumpkin seed oil I love using..Toss it around and its ready. So nice! :) I also like cucumber and tomato salad with with chives and the same dressing, just left pumpkin oil out. All very crunchy, juicy and summery

Pancakes my way :)
Hello all :)
Long time no hear :) it is a very busy time for me now, getting ready for my holiday, work and lots of work :) So because of lack of the time I wanted to make something nice, easy and quick to eat. Pancakes but in more healthy option :)
You will need: 2 eggs, 3 tbs of oats, 1 banana, 2 tbs of peanut butter and coconut milk ( as much as you need). Mix all the ingredients well and fry it on coconut oil. You can serve your pancakes with natural yogurt.

First week of real Summer , we had to enjoy it...
Enjoying the sun after work...
I noticed that in England or at least in the South of England where we are, sun likes to come out in the afternoons or even in the evenings. I find it more hot between 4 and 6 pm than in the morning hours or lunch time. It suits me ;D as I am happy to enjoy evenings in the sun.
One day last week , when I came back from work, I just quickly threw some picnic into a bag , put some Summer clothes on and there I was ready to go out...
I enjoyed sunshine, my ham and cheese salad and of course some strawberries...
I was so relaxed , only I wished Pepper joined me, but she was too busy.
The next day I fancied going cycling. Evenings are so lovely I couldn't miss it. My friend A., the one who shares passion for stinging nettles with me ;) she was up to going for a ride in the fields...I loved how wide the path was , so we could both ride at the same pace and talk...Girls talk rather a lot ;D...
Sun was still shining brightly even after 8 pm...This is really the world I love to live in...beautiful.
Yesterday was a day to visit lakes in Chandlers Ford. It is a nice spot. we liked sitting on the side of the lake and were munching on some water melon...Sooo goood. Sun was in and out...
It was quiet ...except for us talking...disturbing a fisherman :( we decided to move to the other side of the lake...
So from here we walked on the oposite side , after we packed all things we had with us...We should have done that long time ago...we missed some sun here. We are vitamin D worshipers ;D so had to go to find some sun...

Great time
I'm back from holiday... but not really. I can still hear the waves of the sea and the chirping of the cicadas, I can smell the hot salty air and feel the warm wind and I can see the beautiful landscape surrounding us... Mallorca was amazing! (Just our internet wasn't really working all the time).
Just like for Vanilla June is my special month too! This year we had the chance to all celebrate together the 4flavours party - we should do that again next year ;-) - and then I flew on holiday on my birthday. And it was a really good one - the birthday and my holiday: first thing in the morning my mum surprised me with birthday wishes over the radio and then my darling got me such a lovely card and a book I was hoping to get. And after we arrived in our Finca in Mallorca in the evening my family and I had a great time together - eating Tapas, enjoying amazing wine and even better conversation :-)! But I was blessed with more presents and greetings - thanks girls!
As reality kicked in today I want to remember and share a few moments of my holiday.
And yes, I've done horse riding again - and I loved it :-).
