Power porridge for busy days

I always need breakfast. I like having a good start of the day and I would never go without it. Skipping lunch is not a problem but breakfast? No chance :-). Unfortunately my mini flavour doesn't seem to share this idea with me - at least not yet. Maybe when she's a bit older. I still let her try what I'm eating. I usually have muesli or porridge. Nowadays I swap milk for yogurt - natural or fruit - or almond milk just to keep my first meal of the day interesting. But I always want it to be filling and healthy.
So here's one of my favourites at the moment: almond porridge with apricots.
I use 50g of oats which I stir into roughly 200ml of unsweetened almond milk (use more if you want it to be creamier and softer). Let it bubble for a few minutes but make sure you stir it so it doesn't burn or stick to the pot. Put a pinch of salt and one teaspoon of sugar in. Brown one tablespoon of flaked almonds and one teaspoon of sunflower seeds together in a pan with no oil. When the porridge is creamy enough for your taste fill your bowl, sprinkle almonds and one to two tablespoons of dried chopped apricots on top. And then enjoy :-)!

  1. Porridge is so good. I wish I wasn't so lazy in the morning to make it. It is there for my weekend favorite ;) Roasted nuts ? Sounds yum. Will try this soon.
