Two weeks of Madeleine Shaw's six weeks challenge for a life changing diet are completed - well it would actually be three weeks now, but I had to stretch my weeks a bit more to accommodate my partner's and my daughter's needs :-). So how was it so far and where am I standing? I'm actually not too bad in not eating sugar and being more careful about the fats I'm consuming. I've tried some delicious recipes as well. Look, this is the butternut and coconut soup:
But, and here is the thing, I have to sometimes change a few things to make the meal suitable for my family. For example this delicious soup wasn't meant to be mashed but my little princess doesn't like eating soup with bits in it. And as the butternut and coconut are very sweet - which I really like but it's a bit too much for my hubby - I served it with some fresh garlic ciabatta - not good on the fatty and healthy scale I know - but my two sweethearts liked it and ate it ;-). Not all of the main course recipes are suitable for a toddler - as I need more things like stews with potatoes and pasta or rice with a sauce rather than spicy stuff that is a bit difficult to chew when your teeth are still growing - like beef stir-fry with courgette noodles. But I think this book was not meant to be mainly for a whole family so I will change things if needed - still doing my best to stick to the plan - and only cook what is suitable for all of us.
I also found out that I need a sweet treat every now and then - more now than then lol - so I already tried a few recipes as well as the raw chocolate balls. They've actually saved me from munching on something biscuitty several times. Luckily my hubby is not a big fan of them - more for me! I don't have many left though...
