I was asked to bring a brownie to the friends house for the pudding , after our wine tasting and the dinner. Really it was meant to be a Cranberry Brownie, but I couldn't find any fresh or frozen cranberries anywhere, so decided on a Raspberry Brownie instead.
You will need:
200 g dark chocolate
100 g milk chocolate
200 g unsalted butter
50 g salted butter
200 g golden caster sugar
100 g demerara sugar
( I also add 25 g of Vanilla sugar of course ;) )
4 large eggs
140 g plain flour
50 g cocoa powder
250 g raspberries
Method:
Heat your oven to 180/160 fan/gas
If you bake these brownies in electric oven, it will take longer time...I started mine on 180 for 30 min. and than kept checking on it with a cocktail stick. I think it took about 50 min. Depending on your oven.
The tray - 20 x 30 cm baking tray tin with baking parchment.
Put the chocolate, butter, sugar in a pan and gently melt, stirring occasionally with wooden spoon.
We do not like to end up with chocolate scramble egg do we ;) ?
O.k. so stir the eggs , one at a time into a chocolate mixture.
Sieve over the flour and cocoa and stir in.
Add half of the raspberries.
Scrape the mixture into the tray and scatter over the remaining raspberries.
Bake on the middle shelf for 30 min. or if you prefer a firmer texture, for 5 min.more.Cool before slicing into squares or you can get a heart cutter and cut up hearts. I wouldn't usually do that, but I just thought, it would be more special for our wine tasting evening ;)
